Peach Bourbon Smash.

TGIF! We’ve made it to the end of another week. Perhaps a summery cocktail is in order.

Enjoy one of these babies while you can still get a peach or nectarine that is juicy and ripe.

You need Bourbon, 1 Peach or Nectarine, Simple Syrup, and Ice.

To make simple syrup, dissolve equal parts sugar and water together in a small saucepan or quickly in the microwave. I made mine with ¾ cup sugar & ¾ cup water and that was enough syrup for 4 cocktails.

Allow the syrup to cool (you can make this ahead) while you prepare the fruit.

Peel the peach either by scalding the skin with hot water or, if your peach is firm enough, using a vegetable peeler.

Cut a few wedges off of the peach, cut them into smaller chunks, and place them in a fancy rocks glass.

The original recipe had real measurements so I’ll give them to you, but I just estimated.

Add 1 ounce of simple syrup to the peaches and use a muddler or the handle of a wooden spoon to smash the peaches into the syrup.

Add 2 ounces of good bourbon, fill the glass with ice, and give it a stir.

These are plenty sweet so if you are eyeballing it, I would personally recommend starting with a 2:1 ratio of bourbon to syrup and then adding just a liiiiiiiittle extra bourbon at the end.

You could add a sprig of mint and be extra festive.

Also quite easy to slurp down. Consider yourself warned (and encouraged).

Oh, and those peaches in the bottom of the glass that have been happily marinated in bourbon? Heaven!
